1 Pack of Chicken and 1 Tired Asf Momma

So on Wednesday’s I like to prepare dinner for the next following two days (Thursday and Friday) because I’m in school pretty much all day those days. By the time I get home it’s like late in the afternoon or I’ve been stuck in traffic long enough to think it’s late afternoon. It’s not that I don’t cook during the rest of the week, ( I am guilty for takeout ) it’s just, I’m sooooo much more busier starting Wednesday. Between studying, cleaning, teaching, playing, cleaning, bathing, feeding, laundry, did I say cleaning? I really just have little to no energy to go into the kitchen and prepare a meal.

Hubby (bna) picked up a pack of chicken breasts the other day. You know the simple boneless, skinless, comes with 4 in a pack. Well I did a pretty simple seasoning (all dry ingredients of course) and just placed the pieces in a freezer bag and plopped it in the fridge. I used the fridge to store it just so I’m not constantly freezing and thawing the same bag over and over again. Plus it was gonna be used up within the next 2 days.

My seasoning consisted of

  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Adobo seasoning

So here’s what Wednesday’s Dinner looked like … Day 1

Mushroom Chicken & Mushroom Alfredo

I used

  • 2/4 pieces of chicken
  • Half an onion – chopped
  • Tablespoon cilantro – chopped
  • A tablespoon dried parsley
  • 1 diced tomato (no seeds)
  • 1 mushroom (your choice) – sliced thin
  • 1 bottle of Alfredo sauce (your choice)
  • 1 Can of Campbell’s cream of mushroom
  • Your choice of pasta
  • Salt
  • Garlic powder
  • Black pepper

Before I started I preheated my oven to 375 and I mixed my dry seasonings with my cilantro, onion, tomato and parsley

And I added just a tad more of my seasonings to my sliced mushrooms

With my breasts -the chicken’s that is… I took my two pieces and cut them in half- giving me 4 pieces. I did this for three reasons :

1. Hubby (bna) always says he wants two pieces but never finishes it … so these two pieces were actually one πŸ˜‰ little does he know

2. It saves me Chicken

3. It cooks much faster

I turned the heat on high and when my pan was hot enough, I added a splash of vegetable oil and swirled it around my pan to coat it. After I added my chicken and opened up the can of Cream of Mushroom.

I didn’t cook the meat all the way through as I just wanted to almost sear the top and bottom. So it was like 1 min on each side and then I tossed in my cream sauce.

I wanted to just coat the chicken in the sauce. When my chicken was finally covered, and evenly coated in this saucy mess, I transferred all of it (sauce and all) into a baking pan and shoved it into the oven.

In the same pot that my chicken came out of I added again, some vegetable oil and I tossed in my onion/ cilantro mix

I started boiling my water for my pasta. Adding some salt to the water, and when my boiling bubbles started picking up their rhythm, I tossed in my pasta. It was about a handful – for the 3 of us.

When my onions started to cook down and become translucent, I added in 1/2 a cup of water and let that come to a simmer. I then added my bottle of Alfredo sauce.

Once I added my Alfredo sauce and my pot returned to a simmer, I tossed in my mushrooms and extra seasonings and covered up my pot, for about 3-4 minutes while I strained my pasta.

By the time I finished straining my pasta, my sauce had thickened up and all that was left was to toss and sauce

Gave my pasta a good mix, incorporating the sauce into every part of this pan. By that time, my chicken was ready to come out of the oven.

Plate up and add that sprinkle of green just to make it look sooo much better!

The end result

It’s amazing what you can do in the kitchen. You take some random stuff that you think will work well together and that’s what you do. You make a gott’am beautful dish! The best part?

It only took about 30 mins!

But when hubby bna asks… you slaved over that damn stove all day momma!
